Country Ketchup Recipe

  • 1 tbs olive oil
  • 1 cup finely chopped onion
  • 1 garlic glove, minced
  • 4 cups fresh Mann Orchards tomato puree
  • Tomatoes in juice
  • 2-3 tbs sugar
  • ½ tsp fresh thyme
  • ½ tsp coarse kosher salt
  • ¼ tsp black pepper
  • 1-2 tbs cider vinegar

Yields: 2 ¼ cups

Directions

  1. Heat oil in medium saucepan over medium heat.
  2. Add chopped onion and garlic.
  3. Cook until onion is soft and translucent, stirring often, about 4 minutes.
  4. Add diced tomatoes with juice, sugar, thyme, salt, and black pepper.
  5. Cook over medium-high heat until almost all liquid evaporates and mixture is reduced to about 2 ¼ cups
  6. Stir occasionally, about 30 – 40 minutes.
  7. Cool.
  8. Enjoy!
