Country Ketchup Recipe
Ingredients
- 1 tbs olive oil
- 1 cup finely chopped onion
- 1 garlic glove, minced
- 4 cups fresh Mann Orchards tomato puree
- Tomatoes in juice
- 2-3 tbs sugar
- ½ tsp fresh thyme
- ½ tsp coarse kosher salt
- ¼ tsp black pepper
- 1-2 tbs cider vinegar
Yields: 2 ¼ cups
Directions
- Heat oil in medium saucepan over medium heat.
- Add chopped onion and garlic.
- Cook until onion is soft and translucent, stirring often, about 4 minutes.
- Add diced tomatoes with juice, sugar, thyme, salt, and black pepper.
- Cook over medium-high heat until almost all liquid evaporates and mixture is reduced to about 2 ¼ cups
- Stir occasionally, about 30 – 40 minutes.
- Cool.
